About this deal

This simple pork stew makes a delicious alternative to a Sunday roast and because it’s cooked in the slow cooker it’s a nice easy recipe which mean you can have a nice lazy Sunday.

Add the butter and sugar to the frying pan and stir to melt. Add the apple wedges and fry for 1-2 minutes each side on high until caramelised. If you have any leftover casserole you can cool it properly and store it in the fridge and use it the next day. For the lemon zest, peel the lemons and chop the peel finely (rather than using a zester). This is a little more robust than using a zester and adds another texture to the stew, a little bite. Meanwhile, in another pan, dry-fry the lardons until crispy. Remove, set aside, then fry the shallots, onion and celery for a few minutes, to soften slightly.

Because we are using pork shoulder, the meat won't dry out and become tough. You don't have to worry about over-cooking this casserole. If you forget to turn it off and leave it for longer than the stated recipe time, it won't be the end of the world. I'd contentedly scoff every bit of this dish, but that sauce over mashed potatoes? Yes, I could eat that for the rest of my life and not get bored. I cook my cider and pork casserole in a large cast iron Dutch Oven. This has a lid and is suitable for use on the hob and in the oven, so you don’t need to worry about transferring your casserole before baking. Heat the rest of the oil in the casserole and brown the pork in 2 batches, setting it aside with the bacon when ready. Put the shallots in the pan and fry until golden all over. Set aside with the pork and bacon. apple cider – I always use Westons Cider in my casserole, it just has such a lovely flavour that works so well with the pork.Near the end of this time, in another pan, add the sugar to a little water and heat until it starts to caramelise. Pour the caramel into the casserole pan and mix together well. Cover and continue to cook for a further 50 minutes over a very low heat until the pork is tender and the sauce is reduced. Stir the casserole regularly.

Although ‘dump and start’ recipes are very popular, browning the meat is essential to add flavour to your stew. This casserole is made with pork shoulder (sometimes called Boston butt), which can be quite a tough cut of meat unless it's properly cooked. Pork shoulder contains a lot of collagen and gelatin, which makes it ideally suited for the long slow cooking time you get by using a slow-cooker. By the time the meat is cooked, the collagen and gelatin have softened and dissolved into the cooking liquid, leaving only juicy, succulent meat and a rich delicious gravy. I t's truly easy to make. You basically just put all of the ingredients in a casserole dish and then pop it in the oven. You barely have to do any work! The meat will be cooked then you can pierce it easily with a fork, and it is starting to fall apart. Perfect for the oven or slow cooker, this Pork Casserole recipe is cooked in a delicious Mediterranean style tomato sauce, for a healthy, comfort food dinner. Step 5. Return the pork to the pot and stir to combine. Cover with a lid and cook in a 180°C (350°F) oven for two hours until pork is tender.

Step 6. Take out of the oven and bring to a low simmer on the stove. Stir in the cream and cornflour slurry, heating it through for 3-4 minutes. Taste and season with salt and pepper, as needed. Slow cooker Instructions This dish is very indulgent, so shouldn't be eaten too often. But it's perfect for those special occasions! Some casserole dishes can be quite watery, especially if you are cooking in an Instant Pot or slow cooker which don’t allow liquid to evaporate while cooking. Melt the butter in a large, lidded, flameproof, heatproof dish over medium heat on the hob. Step Two How have I possibly been wittering on here about food for that long?! Do you know what though, truth be told Gav (if you don’t get that reference we can’t be friends I’m afraid), I love it now more than ever. At the end of the slow cooking time, the pork should be cooked all the way through, and the vegetables softened.
